New Recipe...Yum!

I tried a new recipe this week and wanted to share with you, as it was super easy and super delicious!


Baked Chicken Chimichangas
1 8 oz pkg cream cheese
1 8 oz bag pepperjack cheese
1 1/2 Tbsp taco seasoning
1 lb cooked chicken (shredded)
8 tortilla shells (soft)
cooking spray
shredded cheddar cheese
sour cream
salsa



Stir together the cream cheese, pepperjack cheese, taco seasoning, and chicken. Divide among tortillas and fold up each tortilla. Lay tortillas seam side down in a sprayed pan. Bake at 350 degrees for 15 minutes, flip over, and bake for another 15 minutes.


Eat and enjoy! Serve with sour cream, salsa, cheese, and any other toppings you would like!



Harvest Time

Earlier this week, I got to go back home and experience harvest season. During this time back home, you just constantly see combines, tractors and semis, as farmers are working to get the crops out of the fields!

I was lucky enough to get to ride in the combine with my friend Jaimie, which I was super excited about! It's been a few years since I've gotten to ride in the combine, and I really enjoyed it!




I just want to take this time to thank all the farmers for their hard work during harvest and pray that they stay safe and have a productive crop!

Home Sweet Home Weekend Shenanigans

Ryan and I went back home for the weekend to see our families, and here's the recap:


1. Love going back to our small town, so pretty and peaceful during this harvest season!
2. Visited our nieces first, here's the twins, almost 4 months old!
3. Read some books with our older nieces.
4. Next stop was our other niece and nephew, she's getting so big!
5. Ryan losing in wrestling.
6. Sunday, we celebrated my mom's birthday while all of us kids were home.
7. Enjoyed the beautiful fall weather playing some bags outside.
8. Us 3 kids with grandma!
9. Got to go on a couple walks with the fam and Suzy, our dog.


Since our high school football playoff game is on Halloween, our town moved trick-or-treating to Sunday, so we even got to see all of our adorable nieces and nephew all dressed up!

It was a great weekend and it was so nice to spend time with family and enjoy the nice weather!

Weekend Shenanigans

This weekend was pretty low key because I had to work Saturday and Sunday, here's the recap!

1. We dog-sat for my aunt and uncle this weekend, which was fun! Ryan now insists that we need a dog, which I am not opposed to, but with living in an apartment and being gone so much, now isn't the best time.
2. Saturday night, we went to the CD release party for our friend Steve's band. It was fun to see them play and catch up with some friends.
3. While at the show, we got some good laughs from this middle aged couple...aka mullet man and big hoops lady...who were putting on quite the dance moves, with a little too much PDA and grinding at times!
4. And, I joined the Apple world last week, so I'm slowly learning all the tips and tricks of an iphone since I had a droid before. So far, I'm loving it!

What Not to Do


Last night, 3 of my friends and I got together and went out to eat at our favorite mexican restaurant, Michael's Cantina. We always enjoy our trips to go eat here, but little did we know we were going to be gifted with one of their most talented waitresses! (insert sarcastic voice) Here's the recap of our night with just a few of the reasons why this waitress showed us what not to do.

1. The first words that came out of her mouth when she got to our table: "Ugh, I'm so tired,  I can't wait to go home."

2. While ordering our drinks, 3 of us ordered margaritas and my other expecting friend ordered a water. The waitress looks at her and rudely says: "Oh, are you not old enough?"

3. Now time to order our food, this was a challenge. The waitress got out her notepad and pen. First order, my friend states slowly that she will have the cheesy nachos without jalapenos or tomatoes. The waitress immediately says, "Wait, so you want the cheesy nachos with no onions and what?" So my friend restates her order. This happened with each of us, as we all withheld something from our order. Obviously it was too hard to just write down exactly what we said as we said it. And she says again, "Sorry, I'm just so tired, I need to go home."

4. At this point, we decided to mess with her a bit. In the restaurant, there is a sign that says "Tonight's tour starts at 7:45." The next time she came back to the table, we asked if we could sign up for the tour and if we got to meet Michael on the tour. She told us she didn't know about the tour and we proceeded to tell her that we came exactly for that reason. She got flustered and walked away without giving us a definite answer.

5. About midway through our meal, she came over to our table, not to ask how everything was or to ask if we needed anything, but to drop off our tabs by saying, "I don't mean to rush you or anything, but I have 6 tables, so here are your tickets."

5. And finally, one of my friends had gotten a to-go order, so after we had been done eating for over 10 minutes, she finally went and asked another waitress about it. Our waitress came over and with some attitude, said, "I gave it to you, it's right here, as she is pointing to the to-go ticket." To which my friend told her that she needed the actual food that went with the ticket, wow!

Therefore, we all got some good laughs out of her throughout the night, and she also did not receive a tip from any of us!

We Are Worthy

I've really been loving my "Wife After God" devotional from Unveiled Wife. I wanted to share a few thoughts from my reading the other day, in which the chapter was titled: Confident Worthiness.

The thought for the day started out with this:
"You are worthy. Regardless of whether you have insecurities, sin, or fear...you are worthy. You were created with intention and you matter." -- Jennifer Smith

Wow! How awesome that no matter what, in God's eyes, we are all worthy. We are all worthy of his compassion, grace, peace, and love. No matter what we do, the choices we make, the sins we commit, or the lack of trust we put in God, he still puts his full commitment to each and every one of us.

Just as we are worthy of God all the time, as wives, our husbands are also worthy of God's unconditional love and our unconditional love. Although it is not always easy, we need to use God's example and show our husbands worthiness no matter what!

Long Weekend and Mini-Vaca Recap

I'm back after almost a week of no blogging. I know you've been really worried about me, so you can breathe now! Since I'm sure you want a full explanation of why I've been absent, here's the recap! And I promise I will catch up on reading your blogs too.

On Thursday night, I met up with some friends in Lincoln at the new Pinnacle Bank Arena for the Dierks Bentley and Miranda Lambert concert! It was amazing! They were both awesome and I would also say that Dierks is pretty darn good looking!

Friday morning, I left for Minneapolis to go visit my sister for the weekend! Once I got there, we went for a nice, long walk around this beautiful lake close to downtown. Then we went out to a couple bars in the downtown area Friday night. Both of the bars we went to had a really fun atmosphere and one of them even had a band playing.

On Saturday, we spent most of the day shopping at the Mall of America! We both had really good luck finding some new clothes, which I expected being at a mall with that many stores! We even saw the winner of The Voice, Cassadee Pope perform! Saturday night, my cousin, her fiance, and friends hosted a "Flannel Party" that we attended! It was so much fun, and yes, everyone was wearing something flannel. We played some games, had some delicious food and I met alot of Minnesotans!

Sunday, we went to mass in the morning. The weather was really nice and sunny, so we took a long, afternoon bikeride on the Minnehaha Parkway Trail. Sunday night, we went out to eat, watched the movie "Now You See Me" (great movie) and had some Skype time with our brother back in Nebraska.

I had a great little vacation, but was glad to come back to the good life in Nebraska and my husband yesterday!

Family Weekend Shenanigans

Sami's Shenanigans

This weekend was spent having some good family time, and it was much enjoyed!


1, 2 and 3 - Friday night, Ryan and I met my mom and a friend to go to the Husker volleyball game against Minnesota! Both teams were ranked in the Top 10, and it was a great game! Nebraska won in 3 sets. It was also the first time I've been to the Devaney Center since they remodeled it for volleyball and the venue was awesome!!

4. After the game, we met up with a friend from work and her husband for some drinks in downtown Lincoln! Here we are sharing a delicious fish bowl at Duffy's!

5, 6, 7, and 8 - On Saturday, we went to a wedding for one of Ryan's 2nd cousins. Even though it was cold, we still had a good time and got to spend lots of time with our adorable nieces and nephew! We all stayed in a hotel, had fun at the pool and of course had some adult beverages. Tried the new Redd's Strawberry Ale, and it was pretty tasty!

9. Sunday, we ran a couple errands, got groceries, took a nap and watched football! We had broccoli cheese soup for supper, as the cool fall temps outside made it perfect soup weather!

A New Devotional

Yesterday I started a new 30 day devotional that I'm doing for the month of October. It's called "Wife After God," written by Jennifer Smith at Unveiled Wife.



The devotional is meant to help us women develop a deeper relationship with our husbands and with God. I'm only on Day 2, but I'm loving it so far.  Each day has a bible verse to read and reflect on and the devotion for that day is based on the bible verse or verses. After the devotion, there is a daily challenge and some questions to think about and journal.

I am excited to continue my 30 day journey and welcome any of you wives out there to order a copy for yourselves too! What a great way this is to strengthen our 2 most important relationships!
